๐Ÿซ“๐Ÿ— Mediterranean Chicken Pita (Air Fryer)
A quick, flavorful dinner that feels fresh, filling, and a little elevated without requiring a ton of effort.
Ingredients:
Chicken:
- 1โ€“2 chicken thighs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp cumin
- Salt & pepper to taste
- Juice of 1/2 lemon
Sauce:
- 1/2 cup Greek yogurt
- Squeeze of lemon juice
- Garlic powder
- Pinch of salt
- Optional: dill or parsley
Toppings:
- Cucumber, diced
- Tomato, diced
- Red onion (optional)
- Spinach or lettuce
Base:
- Pita or naan bread
Instructions:
1. Season the chicken with olive oil, garlic powder, paprika, oregano, cumin, salt, pepper, and lemon juice.
2. Air fry at 400ยฐF for 10โ€“12 minutes, flipping halfway through.
3. Let the chicken rest for 2โ€“3 minutes before slicing.
4. Mix together the yogurt sauce ingredients.
5. Warm pita or naan in the air fryer for 1โ€“2 minutes.
6. Assemble:
Pita โ†’ sauce โ†’ chicken โ†’ veggies โ†’ extra sauce if desired.
Optional finishing touch:
Add a squeeze of fresh lemon and a drizzle of olive oil before serving.
Simple, fresh, high protein, and honestly one of my favorite โ€œtake care of yourselfโ€ meals lately.
