My vegan journey began with trying veganuary 11 years ago and have recently switched to a WFPB style of eating and found that it has improved everything...you'll often find me sneaking potatoes into pudding for myself and my 6 year old! Poppy has been vegan since birth 😌 For the past decade I've been sharing my original vegan recipes on within my communities on facebook and instagram; but I created this community here on Skool because I wasn't enjoying all the negativity, AI, noise and distractions that social media brings... high vibes and yummy food only around here! Sweet Seed Treat
Can’t take the credit for this recipe as the original was created by Mrshollingsworth on instagram (lovely healthy-ish sweet treats) and I adapted it. Will try pop the recipe in the recipe tab. Now, these are fairly high in calories but packed with lots of good stuff and it does seem to satisfy my sweet tooth. You could cut down on the syrup, as the tahini does help the seed mixture to stick together, I usually just wing it and experiment a bit!

100g mixed seeds 1-2 tbsp maple syrup or agave syrup or vegan honey 1-2 tbsp of tahini Mix the above ingredients together and put into muffin trays. The mixture can be really sticky so I found the silicon bendy ones are best. I also put edible rose petals in mine as an experiment and it actually tastes really nice. Pop in the oven at 160 C for 10 minutes I use a cup of 85% dark choc as it says it vegan and I convince myself it’s healthy but sure you could use any vegan chocolate, melt in a bowl over a pot of water (or microwave). Once melted pop in a tbsp of nut butter if you’d like a more fudgey texture. I also at this point put in some chopped walnuts, dried blueberries and cranberries or just leave at chocolate. Then spoon over your seed cakes, leave to set and enjoy!

If you are looking for dairy free ice cream options in Elgin, definitely hit up scribbles! Absolutely scrumptious vanilla ice cream with lots of vegan sauce and sprinkles options 😍 Poppy had bubblegum and raspberry sauce and I had biscoff sauce drizzled on mine - delish! πŸ˜‹
