I've had a busy last 5 days with work and struggling with sleep with my little. So I waved to share a simple way to to meal for days you need protein but don't know what to do.
I make a batch of taco meat with 1lb ground beef. You get 4 servings from that.
Just add 4oz of your taco meat with 1/4cup cottage cheese(or more if you prefer) heat that up. Then add in chips of your choosing with cheese and additional toppings if you prefer.
Mine is simple, meat, cottage cheese, cheese, chili cheese fritos. It's been a go to for me a handful of times this past week for work or at home when I don't want to cook.
