I’m not one for recipes - I often just throw things together unless I’m baking. My go-to salad dressing is something like this:
Spoonful (maybe 1/2 c) fat free Greek yogurt
Juice of one lemon
Squeeze of Dijon mustard
Drizzle of olive oil
Fresh parsley
Minced garlic (maybe a teaspoon worth?)
Salt and pepper to taste
Makes enough for several servings! My salad tonight was romaine, radishes, cucumbers, a few black olives, and a bit of cheese.
