FILIPINO PININYAHANG MANOK
(Braised Chicken in Unsweetened Pineapple Juice)
Sear the chicken thighs or breast over high heat to add a charred flavor, then simmer on low heat for 30–45 minutes in unsweetened pineapple juice with one bulb of garlic (skin on and lightly crushed), pepper, paprika, salt to taste, (and optional ingredients) lemongrass and pineapple chunks.
Serve on side with additional tuna (for protein), tomatoes, cheese, and cold black tea.
