Souerkraut mix up
Hi everyone. I've not been very active in the last couple days due to some kind of crud going around. But it only lasted for a solid 24 hours. I used the fire cider and honey garlic and elderberry syrup I made, for the first time. I really liked them all and they each really helped a lot. I'm posting today after being very busy catching up about what I made today. I'm really excited to see what happens with it. I can't call it sauerkraut. It's not that alone. I wanted to be creative and throw in some other healthy things and I wanted to go for a spicy flavor. Please feel free to give me your opinions good or bad. It's my first time doing anything like this but I'm needing probiotics and I'm not fond of the supplements that cost so much. I kind of winged it since I am clueless on the actual method. I didn't have anything big enough to hold it so yes, it's in plastic. Next time I'll have glass. Here's what I did:
1 red cabbage
1 green cabbage
Fresh horseraddish
Fresh ginger
Fresh turmeric
Celery
Onion
Beets
3 tbls Sea salt
I chopped everything as small as I could then added 3 tablespoons of the sea salt, tossed it and squeezed it then let it sit for 15 minutes.
I tossed and squeezed it again, and put it in the container. I put several of the whole cabbage leaves on top and tried to tuck them in then I pushed everything down as hard as I could several times. Put the lid on with the pouring flap only just barely closed.
I plan on tasting it starting at day 4 or 5 because I don't really like it to taste so strongly like vinegar. I'll try to update everyone when I feel it's done and how I like it.
I did choose each ingredient based on health benefits for me. Well except the horseraddish because I like hot and spicy and I was so excited that a store here finally had it! I actually bought most of what they had and put it in a vaccuum sealed bag to freeze until I can dehydrate it.
