Healthy Sourdough Bread Pudding Recipe
Ingredients
  • 4 cups day-old sourdough bread, cubed
  • 2 cups unsweetened almond milk (or milk of choice)
  • 3 large eggs
  • ½ cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ¼ cup pure maple syrup or raw honey
  • 1 tsp vanilla extract
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of sea salt
  • Optional add-ins: chopped walnuts or pecans, blueberries, diced apples, or raisins
Instructions
  1. Preheat oven to 350°F and lightly grease an 8x8 baking dish.
  2. Spread sourdough cubes evenly in the dish.
  3. In a bowl, whisk almond milk, eggs, yogurt, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  4. Pour mixture over the bread, gently pressing so the cubes absorb the liquid.
  5. Add optional toppings if desired.
  6. Bake uncovered for 35–40 minutes, until set in the center and lightly golden on top.
  7. Let rest for 5–10 minutes before serving.
