- 4 cups day-old sourdough bread, cubed
- 2 cups unsweetened almond milk (or milk of choice)
- 3 large eggs

- ¼ cup pure maple syrup or raw honey
- 1 tsp vanilla extract
- 1½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of sea salt

Instructions
- Preheat oven to 350°F and lightly grease an 8x8 baking dish.
- Spread sourdough cubes evenly in the dish.
- In a bowl, whisk almond milk, eggs, yogurt, maple syrup, vanilla, cinnamon, nutmeg, and salt.
- Pour mixture over the bread, gently pressing so the cubes absorb the liquid.
- Add optional toppings if desired.
- Bake uncovered for 35–40 minutes, until set in the center and lightly golden on top.
- Let rest for 5–10 minutes before serving.
