I used the same recipe as for the cookies that I recently shared to make those pancakes. Those will be my go to's for the next few days:
Ingredients
- 30g vanilla plant-based protein
powder
- 20g whole grain flour
- 1 medium banana
- 100g canned cannellini beans, rinsed and drained
- 15g ground flaxseeds
- 20g dark chocolate, chopped into chunks
- ½ tsp baking powder
- 1 tsp sweetener of choice (e.g., erythritol, stevia, or maple syrup)
Instructions
- Blend all ingredients except the chocolate until smooth. Fold the chocolate in half.
- Cook 6 pancakes in a non-stick pan over medium-low heat, adding the remaining chocolate on top.
- Flip after 2–3 minutes and cook for 1–2 more minutes until golden.
