CAULIFLOWER RICE
Had a crackling morning with Jackie, she was testing out some Dace fish she bought from the Chinese Supermarket for her fish paste, got us all chatting! Cathy was having a breather from cooking, but kept us entertained with her stories.
Meanwhile I was chopping up cauliflower to make Cauliflower Rice using Jackie’s recipe from one of her MOMC shows - only thing is, Jackie couldn’t remember the recipe or doing the show 😂.
Had the Cauliflower Rice for our lunch and it was lush! The Vietnamese mints at the end gave it a nice zing! Will definitely make it again, reckon it will be spot on with an extra tablespoon of tuna flakes next time.
