With the end of year coming quickly and our little community coming to a close, I thought this would be an opportune time for us to share our favourite “go to “meals …. a kind of online family cookbook…
I’ll go first:
Cottage cheese & spinach Frittata
Ingredients:
Cup of cottage cheese
2 x cups shredded spinach
1/2 cup of mozzarella
3 x large eggs
1/2 cup finely diced onion
2 x cloves garlic crushed
Sprinkle of mixed herbs
Salt & pepper
Optional extra: sliced cherry tomatoes / diced capsicum
Olive oil
Method: mix all ingredients together and pour into lightly oiled ramekins/ muffin tray(mine are heart shaped) and cook in oven for 20-25 min or until lightly brown on top.
Note: frittata can be cooked in frying pan on stove top.
Serve with a salad of spinach/ cherry tomatoes/ diced apple/ strawberries/ walnuts with a drizzle of balsamic vinegar.
