Wanted to join in- with you all for the sourdough loaf bake but I’m realizing. . . I really think I need a place to bake with gluten-free bakers and there really aren’t any that are active on this platform. I might have to start my own community for that.
Baking with and without gluten are so different, I finding it difficult to relate and participate, except that I too enjoy baking as much as all of you do, but I’m dealing with a complete different animal without gluten.
I love what Henry has created here 🙏🏼 and I grateful to be welcomed, but I get jealous of your glutinous bakes lol
With that being said, I did bake a sourdough boule and loaf this morning (gf of course) - mixed up the dough Thursday night and it’s been in the fridge since this morning. The cold bake allows for more oven spring that otherwise I could get with a glutinous loaf.
My sourdough starter is quinoa, sorghum and gf oat flour and is 5+ yrs old. I don’t use any gums in my baking, and these are vegan loaves, no eggs either. I’ve worked really hard to develop artisan, great tasting bread that you wouldn’t know was gluten-free. They’re delicious and I served them at my gf bakery.
