Ingredients - 1 box carrot cake mix (or homemade carrot-cake base) - 1 cup coconut milk - 3 eggs - 1/2 cup coconut oil, melted - 1 tsp turmeric powder - 1 tsp cinnamon - 1 tsp ginger - 1 cup chopped pineapple - 1 cup chopped apples - Chopped nuts, for topping Instructions 1. Preheat oven to 350°F (175°C) and line a loaf pan or muffin tin with parchment. 2. In a large bowl, mix all dry ingredients. 3. In another bowl, whisk eggs, coconut milk, and coconut oil until smooth. 4. Pour wet ingredients into dry and mix well. Fold in pineapple and apples. 5.
