Question about making stuffies

When making stuffies, do you use a thicker yarn? How do you ensure that the polyfil won't poke through the knitting? I've done tons of amigurumi dolls, and the stitches are made tight by using smaller crochet hooks. Clearly, we can't change the size of the pins on our machines, nor can we space them closer together. I'm just afraid if I gave stuffies to a child, the polyfil would be too easily to pulled out.
