VAPI time zome times

I am building a booking system with VAPI and the client is located in the time zone CET+2 (Rome). As you can imagine i need to put some restrictions on booking times like for example a client cannot book a restaurant tabe past say 2pm for lunch TODAY. There is no way i can make VAPI understand the time zone the restaurant is located and or that it has to convert times using the CET+2 time zone and use that as a comparison. I have "worked" with chatgpt to get some help on rfining the prompt but still VAPI seems to ignore. If i tell vapi my current time then it corrects and allows to make the reservation.

Anyone has had a similar issue and got it sorted ?
