Money business for Freelance Jobs

Hey guys, I wanted to talk about a situation I was in without experience for the first time and would like to do better in future:

I currently (happily) got a freelance Job at an Indie Studio for Videogames as a Sound Artist & Designer. So my problem always was to answer this particular question:

~ How much do you get paid? / How much do you have in mind? ~

And most of the time I can't really figure out what to say and told them I wanna do it as a mini-job so I don't get involved in taxes and stuff (Cause I'm young and never had anything to do with it & sadly don't have any experience in this field yet)

I chose this myself whereas I could have gotten paid much more. In germany we have a document to get tax money back and stuff but that's so complicated.

What is the best way to handle business deals and how could I approach this much better? How is it possible to appear more professional in these conversations for the future?
