I want to create a personal finance tracking workflow

I am thinking of making a personal finance tracking workflow on n8n. It will connected to my telegram where i will give input and it will store on Google Sheets. The features i am thinking of:

I will give input through telegram in text/voice, and ai will separate the data and store it on a sheet.
I want to create a rag with the data where I will be able to play with the data. I think the challenging part will be data separation from the text! Anyone have idea how I can solve it?
