Anyone Experience with Consultancy? Please Help

So I've decided on my niche. AI Consultant to High Touch SaaS Companies. But my question is, isn't consultant is a bad idea if my end goal is to scale it to limitless? Like, how consultancy can be a high-value DIY.

And if I think this way that, "Once I've solved enough problems for people in this niche. I will launch a SaaS system products that they can use by themselves.

But what if that's not possible? I mean I spent all time and energy just to end up realizing this niches problem can't be SaaS'ed at all?

I'm definitely making some fundamental mistakes.
