Laura makes great potato soup. She wrote an article about it. https://harvestlanecottage.blogspot.com/2017/02/filling-tummies-in-hard-times-simple.html?m=1

twice before Thanksgiving I found potatoes at deep discount so I have potatoes on hand too. I’ll be making potato soup soon too.
broth making day
I brought home the turkey carcass from our daughters last night. It’s pretty big and I put it on to cook this morning for broth. Anyone else making broth today? And why is broth always called Bone Broth now? I thought all meat broths started with bones.

New Stove Top
About a year ago we started having problems with our old stovetop. We had several repairman out and basically they said it wasn’t worth fixing. We were down to 2 burners and one night we were in the living room and the stovetop started clicking. I turn the knob and it shot flames. I unplugged it and turned the gas off immediately. We have been limping along for a while using a gas demo burner, a hot plate, electric skillet, air fryer, and electric griddle. We were fine but Laura said we were camping in our kitchen. Today we got our new cooktop, just in time for Thanksgiving. We are so blessed and excited. It will make it so much easier to do cooking videos now 👏. Our kids are old enough now they have their own homes and their own kitchens and so they’re all bringing part of the food so basically we’re hosting and making a couple pies and the kids are doing everything else. So nice!! Menu- 🦃, mashed potatoes and gravy, green bean casserole, stuffing, sweet potato casserole, corn casserole, and croissants. Oh yes can’t forget the relish tray with carrots, celery, black olives and sweet baby pickles. What’s on your menu? God bless you and may you enjoy your holiday.

Lentil Loaf
This was originally posted to the Living Simple Facebook group by Jennifer and she also posted a link to the original recipe on Food.com. This recipe is definitely a keeper, it actually looks like meatloaf and tastes fantastic! One pound of lentils is definitely cheaper than one pound of ground beef these days. Lentil Loaf Ingredients: 1 cup lentils 2 cups water 1 teaspoon salt 1 small onion, diced (I sauteed these before adding) 1 cup quick oats ¾ cup grated cheese 1 egg, beaten 4 ounces tomato sauce 1 teaspoon garlic powder 1 teaspoon basil ½ teaspoon seasoned salt ¼ teaspoon black pepper Directions: Add salt to water and boil. Add lentils and simmer, cook 30 minutes until soft. Mash lentils. Add onions, oats, and cheese until mixed, Add eggs, tomato sauce and spices. Spoon into a greased loaf pan. Bake at 350 degrees for 30 to 45 minutes

Belinda Thank you for the recipe and recommendation. I’ll put this on my list of things to try. We are big fans of lentil tacos. One grandson who is a little picky is the biggest fan of lentil tacos. He was eating them and asked me if there would be lentil tacos in heaven. 😊
What is in your pantry?
So in 2012 I wrote a cookbook called, Pantry Basics - Cooking during hard times. The computer I was using died and the cookbook was not recoverable, good thing I printed it all. I wanted to share about the basis of this cookbook, the pantry. I am attaching a pantry list. I need some feedback here. Please review it and let me know if you have all these items in your pantry, or what you might have different that is a basic pantry item. Blessings!
