Reincorporating missing elements.
Having been away from the restaurant business for the last 18 months has left a few holes in our system, obviously financial and social interactions have been reduced, and also the homestead used a large proportion of the waste stream from the commerce. Left over food for us and plate scrappings for the pig , chickens and dog. Cardboard, coffee grounds and potato starch for the compost , also plastic bottles for tree guards and numerous others. Even the beer garden where we had sheep has been missed. This is all a example of you don't know what you had until it's gone . Through unforseen circumstances we have had the opportunity/misfortune to have to reset and restart this venture (which is on another site 1km away from the farm .) so we are taking the opportunity to make the most of it after a well earned period of rest and reflection.

The restaurant does a lunch menu for workmen which is traditional in France, it's a set price and has two choices of starters and mains and a selection of desserts. It's what works ,and this will be the 3rd time my wife has opened a restaurant. My domain is the homestead.

Last minute I made a mistake while changing the gas injection from town to bottle gas and left my spanner inside the cooker. My wife said leave it, but I hate loosing tools , so it all had to be moved again. Finished.

@Cheyanne Janney there are still new problems that need resolving, like soft wear problems on the till and the pilot lights on the cooker are too strong, on the whole it's a big success and everyone is happy, now I can return to my real priority, the homestead and forest garden.
Someone asked me..
If I had to go back to work would I... Go back to my old job, knowing the systems, the faults, the ins and outs of the business, the dynamics or everything... potentially have a good salary OR Look for a new challenge, new people, new structure,new systems, unknown territory and potentially not earn the same salary.... I'm interested in your thoughts... ( Do U believe in the saying, rather the devil you know than the devil u don't).

What's happening to reduce the over consumption of meat, if we start at 125g per day and try to cut down to that 3 times a week, we would all be so much healthier and could afford to buy better raised meat or higher priced cuts.
Pasta Debunked....
So there was a post, I think it was @Krista Melanson 's community about putting olive oil or oil in your pot of water with salt when cooking pasta, the debate was does the oil add any effect while cooking the pasta, ie stops the pasta from sticking together while cooking....... Well, I cooked a whole pkt of Spaghetti Pasta with salt and water, and the pasta did not stick together, but I did oil the pasta after I drained the water. Ude it don't use it or share your experience...
