Fish Varieties to Cross Off The List for Fish Paste
I tried making fish paste using 1) tilapia 2) yellow croaker fillets - both of which according to online research would work fine for fish paste, but that turned out to be a bald-faced lie - the texture was soft and spongy (I tested a dollop of each type, and ended up combining both to make the stuffed eggplant and stuffed chillies)
