@Aaron Dawson must be tied up this evening. How was everyone’s day? We finished renos today which feels great to have that job completed. Walk and Reno’s were my workout. Hope everyone had a great day and enjoyed the sunshine. Been off line for a few days. Took care of my 4 year old nephew Finn. Busy, fun, unplugged and rewarding! Then I went down a rabbit hole after receiving not so great health information regarding my Dad. It has been a lot to process and I tend to retreat when life gets emotionally challenging. I recognize it is not the greatest habit, but it helps me recharge as I am “that” person in my family. I go to all the appointments, I take all the notes, and I support. This time round I have continued my walks and workouts from home as it helps clear my head and around fun with Finn. Even though I haven’t posted in a bit getting notifications from this group gave me the much needed daily nudge. I am starting to emerge.

You have all week for this! 150 points! Alright, we’re stepping it up a little with this one. No throwing chicken in the air fryer and calling yourself Gordon Ramsay. 😂 We’re making: 🇬🇷 CHICKEN SOUVLAKI BOWLS WITH CRISPY LEMON POTATOES, HOMEMADE TZATZIKI & GREEK SALSA 🇬🇷 Healthy. High protein. Lots of fresh ingredients. And challenging enough that you’re actually going to have to COOK. Makes approximately 4 servings. 🛒 INGREDIENTS 🍗 CHICKEN SOUVLAKI • 2 lbs boneless, skinless chicken breast • 3 tbsp olive oil • Juice of 1 large lemon • 4 cloves garlic, minced • 2 tsp dried oregano • 1 tsp paprika • 1 tsp onion powder • 1 tsp salt • 1/2 tsp black pepper • 1/2 tsp ground cumin • Wooden or metal skewers 🥔 CRISPY LEMON POTATOES • 1 1/2 lbs baby potatoes • 1 1/2 tbsp olive oil • Juice of 1/2 lemon • 1 tsp dried oregano • 1 tsp garlic powder • 1/2 tsp paprika • 3/4 tsp salt • 1/4 tsp black pepper 🥒 HOMEMADE TZATZIKI • 1 cup plain Greek yogurt • 1/2 English cucumber • 1 clove garlic, finely minced or grated • 1 tbsp fresh lemon juice • 1 tbsp chopped fresh dill • 1 tsp olive oil • 1/4 tsp salt • Pinch of black pepper 🍅 GREEK SALSA • 1 cup cherry tomatoes, quartered • 1/2 English cucumber, diced • 1/4 red onion, finely diced • 1/3 cup crumbled feta cheese • 2 tbsp chopped fresh parsley • 1 tbsp fresh lemon juice • 1 tsp olive oil • Pinch of salt • Black pepper to taste OPTIONAL FOR SERVING • Lemon wedges • Extra feta • Fresh parsley or dill • Warm whole-wheat pita 🔥 STEP 1 — MARINATE YOUR CHICKEN Cut the chicken breasts into roughly 1 1/2-inch cubes. In a large bowl, combine olive oil, lemon juice, garlic, oregano, paprika, onion powder, salt, pepper and cumin. Add the chicken and toss thoroughly until every piece is coated. Cover and refrigerate for AT LEAST 30 minutes. If you have time, give it 2–4 hours. If you’re using wooden skewers, soak them in water for at least 30 minutes before cooking. 🥔 STEP 2 — GET THE POTATOES GOING
