Seasons & Cooking Styles
How powerful and amazing is it to watch the seasons change? From the way that the air changes to the color of the foliage, we watch Mother Nature work her magic. Our cooking styles change as well. As the temperatures rise we look for lighter dishes like grilled meats and vegetable salads and then the stark contrast of cold temperatures with braised meats and vegetable ragouts. Let cooking bring you closer to the seasons and closer to nature. Happy cooking!

In the Nordic countries where I live the four seasons are extremely different from each other. When in summer and enjoying light food you soon long för the dark fall with winy and rainy day so that you can cook stews and sitt inside and enjoy. We would like to think that the summer is the greatest season for vegetables but in fact it is almost fall before most of them ripe. So the fall and early winter is my favorite season. At that time we have loads of different vegetables, berries and mushrooms. Of courser we have lots of imported veggies but I like to cook what it's in season. I the middle of the winter we try just to get throw and wait for the light to return and in March/April we wake up again and prepare for spring and summer.

@Ryan Carbery I like all our seasons and my kind of cooking is about the ingredients and to trust them and their taste. Less is more. I'm not into using twelve different spices in my food. I want to be able to taste the main ingredients them self. I think I cook very nordic and we are inspired by French techniques. But we are also early adapters so we love new ways to cook (for a while). I like Indian and asian hot stuff but that's not what I'm cooking.
