No garden. No fancy equipment. Just a jar, a few minutes a day, and a little patience. Easy peasy! Navigating eating out 👀
One of the biggest challenges of being vegan isn't always the food — sometimes it's finding restaurants that make everyone at the table happy. My hubby isn't vegan, so we end up looking for places with options for both of us. We definitely have our 4 or 5 "safe" restaurants, but every once in a while we stumble across a hidden gem. Last night we found a NEW one. What I loved most wasn't just that they had vegan options, it was that they had an entire vegan menu. I LOVE LOVE LOVEmexican food and sadly not one single restaurant in my area has vegan options — until NOW 🌮🌮🌮🌮🌮🌮🌮 I didn't have to ask them to leave the cheese off. I didn't have to swap ingredients or piece together a meal from side dishes. I got to order straight from a menu that was created with vegans in mind, and honestly...that felt pretty special. No impossible meat, no fake cheeses. Just whole food YUMMINESS 💚 Rice. Beans. Veggies. Fresh salsa. Pickled onions. Roasted veggies. Vegan slaw. Vegan house made sauces. Even vegan cookies for dessert! 🍪 I had my first vegan chocolate chip cookie in a year and a half!!! It was mouthwatering delicous!!!!! The crumb was spot-on PERFECTION! And I discovered something new!!! Date butter. 👀 Housemade date butter made from housemade vegan butter! (The co-owner is vegan — huge score!) Where has this been all my life?! Now I'm curious?!?!?! 👇 When you're looking for somewhere new to eat, what do you look for? Do you search for a separate vegan menu? Check HappyCow first? Read Google reviews? Or just take your chances? If you've found an amazing vegan-friendly restaurant, drop the name below! Whether it's a fully vegan spot or just a restaurant that genuinely welcomes plant-based eaters, I'd love to hear about it. 🐾 Can we talk about something that many vegans think about...but rarely talk about?
One of the hardest parts FOR ME PERSONALLY of being vegan isn't what I eat. It's what I feed the animals I love. I'd love to have an honest, judgment-free, NICE conversation because I suspect many of us have wrestled with this too. For a long time, I felt conflicted. I love animals. I care deeply about reducing suffering. Yet I also have a responsibility to care for the animals who depend on me. Over the past year and a half since becoming vegan, I've had to sit with some uncomfortable questions, challenge some of my own assumptions, and ultimately make peace with the choices I make for my own dogs. This absolutely isn't a debate post. It's a curiosity post. I know there are people on all sides of this conversation, and my hope is that we can simply listen to one another with kindness. If YOU'RE vegan and share your life with dogs, cats, or other animals... How do you navigate it? Have you ever felt conflicted? Have you found peace with your decision? Do you avoid talking about it because you're worried about being judged? No right OR wrong answers here. No shaming. No pile-ons. Just an honest conversation that I suspect more of us are having privately than publicly. 🐾💚 Pictures of our newest addition, Dexter. He's a week shy of 4 months old 🐾

@Jenny Rader-Bakos we somehow had a bird get into our guest house (all doors and windows closed!). The cat alerted me to it, but I was able to get the cat out, have the door open, and eventually the bird flew to freedom, leaving me to clean up it's mess.

Sweet Potatoes... For Breakfast?!
I love a sweet breakfast, but I'm always trying to figure out ways to get veggies and nutrients into my meals. That's where the Sweet Potato Breakfast Bowl is perfect. It's warm, it's sweet, it's got crunch, and it's filling. I cook sweet potatoes in the oven at 425° for about an hour. This carmelizes them from the inside, making them nice and sweet. No aluminum foil or piercing with the fork. Just set the sweet potatoes on a cookie sheet (I use butcher paper as lining to minimize cleanup). Once done, cut a slit in the skin and the potato will come right out. Mash into a bowl or on a plate, then add all your favorite toppings. I use cinnamon, a little honey (did I mention I like things sweet?!), a dusting of ground flaxseed (yay for fiber!), pumpkin seeds, walnuts, raisins, and a cut up banana. I use about a tablespoon of each topping. You can add whatever you want!

@Jenny Rader-Bakos I haven't been able to find any purple sweet potatoes, so it's only the traditional for me. I did plant purple (although called "blue") potatoes in the garden this year, but they're standard spuds, not sweet potatoes.

Y'all know what we celebrate on Fridays! It's ALL about our wins. Maybe it's big, maybe it's little. Maybe a new habit. More plants on your plate. Maybe it's simply YOU SURVIVED! Okay. I'm ready to share my mystery win from last week. 🫣 12 days ago I gave up marijuana. I know. For those of you in the US or Washington state you probably know it's completely legal here and I have used it comfortably for ocer 30 years. It has been my wind down. My creative space. My quiet. My comfort. And walking away from something that has genuinely been such a huge part of your life for that long is not small. It just isn't. I've tried before. Many times. But honestly, I just wasn't ready! Has it been easy? Absolutely not. 😂 Luckily guys, I'm still married 😆😆😆 Has it been worth it? Without a single doubt. 🌿 The clarity is real. The sleep is different. My mornings feel like MINE in a way they haven't in a long time. And honestly? The food tastes even better. Which I did not think was possible. 😂 I'm sharing this because this community is built on real life and real wins and this is both. We talk about nourishing our bodies with whole plants and this is just another layer of that for ME. Cleaner. Clearer. More rooted. 🌿 12 days. And I'm not looking back. This is a huge win!! It's served you for so long, and yet, you're recognizing that it's time to close the door on that piece of your life and open doors to new possibilities. I'm glad life is rewarding you with so many positive byproducts that you weren't even seeking or expecting. I wonder what positive byproducts in other areas of life we may be unknowingly missing out on by things we think are serving us?
