What is the purpose of Siu Nim Tao, Chum Kiu, and Biu Jee?

Siu Nim Tau gives you all the basic hand techniques while allowing you to develop a solid stance. Chum Kiu takes those concepts and adds footwork and kicking. Coordinating the arms with the legs. Biu Tze has methods for regaining victory when the basics become compromised, and also gives a supercharge to your level of softness to dissipate and issue incredible amounts of force.
Question
How did you first hear about Wing Chun? Give your answer in the comments below. Personally, I had a friend in high school that had been doing Wing Chun for about a year and he was always talking about it. I was interested in Martial Arts already and wanted to have some kind of formal training, so decided to try out Wing Chun. It also happened to be the ONLY martial art school in the city I lived in.

@Lewis Alongis oh wow, I've heard of a few experiences like this. Just so happened to fall into this art specifically. Like me, it was the ONLY choice in town and here I am 20 years later. Just so happened to be the only place in all of Georgia teaching this lineage.

Origins of Wing Chun
We know the story of the founding of Wing Chun. It was named after the founder who was taught by Ng Mui in order to fight off a suitor who wanted to marry her. The problem is it sounds like the plot of a Kung Fu movie. What are your thoughts on how true the story is?

It seems like Ng Mui at least was a historical figure, she's mentioned in lineages of other styles as well as being one of the 5 elders that fled the burning of the Shaolin temple. Since we didn't have cameras back then and Wing Chun was passed on orally, we can really only just go with the story that was passed down. Wing Chun also went through a lot of refinement and development over its history, so it's very safe to say what GM Yip Man taught was very different to what it originally looked like. And that's not a BAD thing! Each grandmaster saw things over their decades of experience that needed to be updated and further refined. We're not all driving the Model-T anymore, and for good reason. That being said, I specifically said "each grandmaster" not just some random person with a couple years of training that hasn't even finished the system. (Looking at you Bruce Lee!) Keep the good and throw out the bad, that only works if you've finished the system. If you've only learned a tiny portion of the system, you don't have the context to know what is good and what is bad!

@Nicholas Milevsky the fact that the name of the art itself is supposed to be named after her, I think it's a good chance she was real. Once a whole generation dies out and they're not around to tell their story anymore it becomes mythology. 100 years is a long time. 1000 years isn't something we can even fathom.
