I'm so late to this assignment! My apologies!! I'm basically from Idaho - I moved her when I was nine (and I'm not admitting how many decades ago that was!) My favorite thing to cook is soup or stew. I love being able to create something totally new and build flavor as I go. Lasagna Soup and French Onion Soup are my go-tos when it starts getting colder! My culinary entrepreneurial goal is to expand my current food truck business across the US with a focus on being mobile first (food truck/trailer vs. brick and mortar). I'm not opposed to brick and mortar in the future and I have thought about franchising but I'm uncertain about those particular details right now. I love our little concept however I have always wanted to create more of an upscale dining experience so maybe that's something I figure out! (Before my food truck, I was never obsessed with burgers or even really considered them a favorite food until I started playing around with different smash burgers!) I want to learn about scaling my business, how to hire and find the right people, and become more consistent in how I run my business (regular social media posting, marketing newsletters/texts, etc.).
