I love your route of expanding your mobile business first and I look forward to discussing on video (will record for you all) the topics you mentioned in hopes that you'll find it helpful! With talks of financial stress and an apparent decrease in consumer spending across the board, how are you coping/dealing with this? How is it affecting your own business?

You ever hit a goal you thought would change everything, and then… you still felt the same? What did that teach you about what actually matters?

YEP! We had hit a revenue goal that surpassed the last two years at the restaurant but instead of expecting to feel accomplished, I felt extremely drained, a bit irritated, and wrote down things to improve on. The stress that revolved around obtaining that revenue took away nights of sleep, tons of prep, certain things went so wrong, and overall was an experience worth learning. I thought I'd be elated and feel accomplished, but I felt like I should go back to the drawing board and reevaluate how to work smarter, not harder. Staffing, processes, and maybe even simplifying the menu to help with the ease. What really matters is health both physical and mental. And those two were jeopardized for money. I didn't like it. lol How about you?

What a great question and topic of discussion, Tommy! For me, what keeps me going is my passion to cook for the regular customers who appreciate my food. On days when I've wanted to just give up (there have been plenty), I think about the kind people who plan their schedules around being able to have a meal at my restaurant. That sort of commitment shows that I am doing something right. Feedback from satisfied patrons or visitors from out of state complimenting the quality of food (comparing to their local favorites) brings me joy knowing that I'm doing something right. Some days are extremely hard, and I try to hold on to the reason why this all started. And not giving up is the biggest win! How about you?

@Samong Som You are absolutely correct about one’s signature dish! Mine is shrimp ceviche lol I grew up being around my Hispanic friends and their abuelas taught me amazing dishes. Don’t be surprised if I ever open up a Mexican restaurant 😆
