This chicken dish with fresh basil, sun-dried tomatoes, and goat cheese is one of my favorite go to for high-protein low-carb choices at Carrabba‘s restaurant. Join me tomorrow, Tuesday night at 5:30, as I turn on the camera in the school calendar and Cook with you live! I have watched for many years Food Network type of channels where they make a delicious recipe and then I want it and can’t have it because it’s only a show, and I wanted to take this to real life and help transfer some cooking skills for recipes. I think sometimes we fall victim to not knowing what to make or how to make something delicious at home and that leads to poor dietary choices. Many years ago, I decided that I wanted to become such a good cook at home that I no longer wanted to go out to eat. Well, I still love most restaurants with a chef, but my cooking skills have improved and when it’s simple that and tasty that is my kind of dish! Ingredients to have on hand: fresh or frozen chicken breast, (I will be using a frozen chicken breast with a meat thermometer), plain goat, cheese, or really any spreadable soft cheese could probably work, sun-dried tomatoes, give a little sweet and tangy flavor accent. Optional is fresh basil, lemon, chicken stock., And garlic. Instead of serving this with pasta, I will be baking some squash since it’s fall and the oven is on :-) hope you join me!
