If you want to follow my pace, here's roughly when I'll hit each stage: 🥣 Fermentolyse: 8:00 AM 🧂 Add salt: 9:00 AM 🔄 First coil + seeds: 9:30 AM 🔄 Second coil: 10:00 AM 🔄 Third coil: 10:30 AM 🌡️ Bulk finish: 11:00 AM to 1:00 PM ✂️ Pre-shape: 1:00 PM 🪢 Final shape: 1:30 PM ❄️ Cold retard: 1:30 PM to 5:00 PM 🔥 Bake: 6:00 PM ━━━━━━━━━━━━━━━ ⚠️ Your timeline may run faster or slower depending on your kitchen temperature. Don't chase mine. Watch your dough. ━━━━━━━━━━━━━━━ 📌 A Few Quick Reminders For Today 🧂 The dough is going to look like it's falling apart after the salt. That's normal. Keep working it. It'll come back together. 💧 At 80% hydration, wet hands are your friend. Floured hands work against you. Keep a bowl of water nearby. 🌻 If you're using sesame, sunflower, pepitas, or any seed besides poppy... Toast it first if you haven't already. Sourdough no poppyseed bake
This Sourdough without Poppyseed but used Henry recipe except in all my recipes as Cheryl and Henry know no salt 🧂 added Just taken from the oven .. so doing another bake with sourdough poppyseed bake as bought more from the store late yesterday.. so will bake tomorrow same recipe same method my kitchen is 20 Celsius outside temperature 🤒 16 my time is 0946 hours will slice when it’s cooled🥖

First try at sourdough pretzel
I made the pretzel loaf and it was a mess, haven't tasted it yet. I think I over did the bulk and the cold, it barely fit into a canning pot and started to come apart in the boiling water. It has a very soft crumb and great flavor. Here are some pictures.

Sourdough Brioche Donuts
Well to be honest i don’t like the taste of the baked donuts from the oven very much as i prefer the taste frying in coconut oil was the winner .. the recipe stated to do it by oven.. preheat to 200- 175 for 9 to 13 mins … i pull one out after 13 mins split it in half was pale and doughy so place it back in the oven and cook on 200 Celcuis for another ten minutes then pull them out placed melted unsalted butter then rolled in cinnamon sugar .. i used a muffin tin decided no holes as the hubby prefers them with cinnamon sugar only ... here are the results below if i bake them again i will not be baking in oven seeing my husband doesn’t have cholesterol or heart problems 3rd pic of crumb doughy …5th crumb shot was cooked tasted better so hubby stated after being in the oven for 23 mins all up… the rise was perfect i was pleased with that and the crumb at the end was just right the temp in my kitchen was 22Celcuis .. outside temp 27 Celcuis ..

@Henry Hunter I did that Henry straight from the refrigerator to coconut oil loved the taste better than the oven baked.. I only baked the other way for the new baker (@Candi Brown-McGriff) as she stated she only baked it using commercial yeast that ask for it ..I stated I prefer the frying rather than the oven cos of tasting like 🧁rather than a Donut
