Taco Tuesday
Happy Tuesday ladies, I've had a busy last 5 days with work and struggling with sleep with my little. So I waved to share a simple way to to meal for days you need protein but don't know what to do. I make a batch of taco meat with 1lb ground beef. You get 4 servings from that. Just add 4oz of your taco meat with 1/4cup cottage cheese(or more if you prefer) heat that up. Then add in chips of your choosing with cheese and additional toppings if you prefer. Mine is simple, meat, cottage cheese, cheese, chili cheese fritos. It's been a go to for me a handful of times this past week for work or at home when I don't want to cook. Hope you are all doing well! How do you prefer your tacos? Would you try this or change it somehow?

This Week- Soft Reset: Start every Morning with 30g of Protein!
After 2 weeks of eating whatever is left in the fridge like a racoon because we were in the middle of moving from FL- SC, I finally was able to eat a high protein breakfast yesterday!!! It felt soooo good! The aim for this week, eat an easy protein packed (30g) every morning this week! No need to overthink it, just eat nutritious foods that fill you up! My breakfast of choice for a busy mama of a feral almost 2 year old boy this week is: - 2 poached eggs (12g protein- 6g of protein each egg) - 1 cup of cottage cheese ( 24g protein) That is a total of 36g!! Also, if you want to add some fiber- add a cup of berries! That will make an amazing easy and fast Breakfast! Share your favorite 30g+ protein breakfast!!

@Lara Pettit Yeah I usually eat cold :) But I also sometimes make omelets with cottage cheese and it sooo fluffy and yummy. I usually do 1 egg and 1 cup egg whites, mixed with 1/2cortage cheese and put some herbs and cherry tomatoes and spinach in the omelette;)
