Question
Kat, after the bulk fermentation step, my dough has a slight ‘crust’ across most of the top. What did I do wrong and should I continue or start over?????

The rule of thumb in Sourdough is to always bake it. You really just never know haha! A slight crust is fine to still bake with for sure, it just means it got too dry:)

Try plastic wrap next time! Sometimes the dish clothes just don't trap enough moisture underneath:) If you do use a thin dosh cloth, I would recommend wetting it and then wringing it out really good so its damp!
