Absolutely an outdoor girl here. Morning trail hiker. Road trips. Heading to one of our fav places in West Virginia Blackwater Falls and the surrounding area. Highest peak in West VA. EAch month my husband and I shoot for an overnighter around 3 hours outside of where we live. In summer it's either the ocean beaches or the cool mountaintops. As for fav recipe, we've been hooked on light summer fare like bruschetta with diced plum tomato, diced red onion, balsamic vinegar, olive oil, fresh basil, mozzeralla on toasted sourdough. It satisfies as a meal. Snacks are smoothies. I discovered a great smoothie with fiber and protein - can of chickpeas, half head of small cauliflower, 1 cup frozen fruit (I love cherries), plant milk, one banana. Also added 2 T acai powder. Made enough to turn into popsicles and have as a thick smoothie. Yum! Love summertime fresh eating.
