Just being able to enjoy a sunny day here in England. I am surrounded by books and have about 30 bird books. We had to go into Eastbourne town centre and I popped my head into Waterstones, bought another book, Britain's Birds! I always have room for another book.
Diversion...
You all may have realized my life has taken a turn but I am on the right track. My cooking has come to a halt unfortunately, at work I have skilled Chef's and at home my mother takes care of me ( as mother's do) So if you ever want a Asian Dish being made first hand left me know, and I will do a video recording my Chef's do what they do best.

Bread and Cheese
I love cheese — properly love it. I used to hop over to Bruges every three months just to stock up, like some people go for a weekend break and I go for a dairy pilgrimage. When I owned a place in Torrevieja, I’d snake my way through France and Spain, stopping at every farmstall I could find, hunting down whatever local cheese they were proud of that week. And whenever I had the time, I’d bake my own crackers and bread to go with it, because nothing beats pairing good cheese with something you made yourself.

@Elena Maren Goats have that signature smell... first time I ever ate goats cheese was in Italy and it tasted as bad as a goat smells. It was gross... Then I was given toast with tomato and cheese and loved it, only after I ate it did I discover it was goats cheese... now I love it.
Burger and Sauces
I am a lazy cook, I like simple recipes and use bases that I work from. In a food business this is the key to being cost effective. I have been to Steak houses and have been surprised to see that they offer maybe 3 sauce choices when in fact they could offer a wide variety in a few minutes. Here is a great burger and 6 great sauce flavours from one base sauce.

@Sandy Chong Hi Sandy... yes, prawns are a problem here in England too, even the Parktown Prawns are double the size.
