Canning
Who else loves to water bath or pressure can? What are your favorite things to preserve this way? My top favorite has to be dried beans. The texture I can get pressure canning chickpeas makes the best/easiest hummus.

@Sarah Malnar I am not a huge applesauce eater but love it to bake with. I had not thought of freezing apples before canning. I 100% do that with my tomatoes though and it is very helpful if you have the freezer space.

@Jorge Kleiss I have never had plum jam before. Having access to a bunch of locally grown plums must be amazing! Is making them into jam the best way to persevere them?

2025 goals
What are everyone’s 2025 goals for their learning and/or homesteading journey? I’ll kick it off! My goal is to sell my extra produce next year. Which also ties into I need my garden to be way more efficient so I have even more to sell.

@Monique Mortelliti if tomatoes products are your main goal to can you can water bath can them with the right level of acidity. Have you thought about water bath canning?

@Monique Mortelliti I am going to add this course to my list for this year as well! There are so many things to learn! It is definitely a lot of work cleaning up brush from downed trees. What might be helpful if you have no energy is set a timer maybe 30-60 minutes and just do what you can.
Purchasing soil/compost
Any recommendations for how to source soil/compost? I need to top off some beds and add a few raised beds/5 gallon buckets. Last year I sourced it locally and got some delivered to my house in a dump truck (to avoid the plastic) full of weed seed. Any recommendations to get soil/compost or how to fill raised beds cost effectively?

Surprise
Tomorrow starts a new adventure for us. We are praying all goes well with what's about to transpire. Our ten year anniversary and Christmas present rolled into one. This involves permaculture!

@Evon Saavedra I am so sorry! It is heart breaking to not get property when you're looking for it. I am a believer in timing though. I listed my house in October and haven't even had one showing. I am now focusing on some other things while I save for a down payment so I can make my current home a rental instead of selling.
