Hey MRC Crew! Happy Monday morning! How’d your weekend go? It was pretty 🥶 here this weekend so we stayed inside for most of the weekend. I’m hoping we get a little warmer weather soon & more snow so Melissa and I can go snowshoeing. I made this great chicken thigh/broccoli sheet pan recipe last night. It was quick to prep -though I would probably let the chicken sit in the marinade for longer, took about 40-45 min in the oven and tasted great! Definitely adding it to the rotation especially if I’m crunched for time.
