@Craig Lancaster I was saying we used to only do it once a week. On Mondays and it was a hour plus the ā€œPre Showā€.

Batch yield and pricing
How many 18ā€ bags do you get from a 6 cup batch. I’m getting 4 Bags per batch with a cost of $1.49/bag, does that sound in the ballpark?

@Bryan Pearce they are from Polybag I think 8.5x18. I did an 8 cup batch yesterday just to see how it would go and only got 6 bags. I don’t have a sorting table, I’m using the sifting tray in a box. My thoughts are I’m either too scared that it’ll burn and not popping long enough or I’m breaking it up too much in the sifting box.

@Bryan Pearce im only like 8 or 9 batches in so I have a lot to get down. The VU meeting happens at 6 my time, most of the time I’m still working or breaking the cart down, it makes it extremely difficult to make the meetings let alone interact most of the time.
Chopped Onions
What type of onions are y’all using for chopped? White, yellow, sweet, Vidalia?

Red onion, I use them for my diced and with their high sugar content they are great for grilling. I only wanted to buy one type of onion for all my items. Dogs, cheesesteaks, burgers, nachos and pickled for gyros, red works on them all.

Hi, Anyone from the Portland area able to recommend a meat wholesaler that sells Sabretts?? Too expensive to buy and ship from the east coast. Thanks!

You can’t get them out here. It’s like Vienna, the shipping is too expensive and no local distributors stock them. If you are looking for a natural casing, Olympia Provisions in Portland does a 4/1 footlong. They are good but with shipping are about $1.80ea in a 5lb case, I know they have a cheaper price for will call pickup. I use Kirkland dogs, it’s the dogs everyone here knows.
Commissary
It turns out in my neck of the woods restaurant / small business don't want to rent out for commissary usage because of the liability risk. Churches save the rights of their kitchens for their congregation. But, the good news is we do have a real commissary in the next town over. It's 45 minutes away one way. I got to do what I got to do.
