Sourdough Baking
So I tried to make a sourdough loaf using Henry's white bread recipe. It doesn't have an ear, and I'm noy sure what I've done wrong. My guess is I didn't bulk ferment long enough, even though I let it rise for 9 hours. It was cold in my kitchen, temp around 69 F. What do you think?

@Gaylord Foreman I wasn't really watching the clock, it was midnight by then, and I wanted to go to bed. I saw bubbles on the top, so I shaped and stuck it in the fridge. I guess that I'll just have to start earlier, or wait for warmer days.😂

@Gaylord Foreman Why didn't I think of that! Thank you, Gaylord. I have a rubber heating pad that I could put under my vessel. This was only my 2nd try at sourdough. Both times I thought it was under fermented. I use a straight sided clear container too. It was close to double in size and there were a few bubbles on the top, but it didn't jiggle like jello. I start to worry that I overdid it after 9-10 hours of watching. Apparently not. Thanks for your help, bro.
