My hubby spoiled me today. He asked what I wanted and I was like I really want nachos 🀣🀣🀣🀣 HE FOUND ME VEGAN NACHOS!!! These were the best damn nachos I have eaten! Chips, pintos, black beans, roasted red potatoes, baked tofu, THAI PEANUT SAUCE (instead of plant-based queso), corn salsa, cabbage, cilantro, and house made pickled onions! ( I'm totally re-creating this as a nacho rice bowl!!!!!!!!!!) She let me add pickled onions after she asked my hubby if he wanted any. And I was like did someone say pickled onions 🀣🀣🀣🀣 The gal who built these was incredible! I knew I was going to get a good plate as I watched her place each chip individually by hand. No joke. She wasn't building me a plate of nachos she was building me a masterpiece! Straight up. Turns out she works Monday-Wednesday. Now I know where to go for the best vegan nachos on the planet! It was a hole in the wall burrito shack! Been open for 50 years! And I can say I have NEVER stepped foot into a bathroom quite like this one. Of course I took photos πŸ˜†πŸ˜†πŸ˜†πŸ˜†πŸ˜†πŸ˜†

Keeping it simple this week because healthy eating doesn't have to be complicated 🫢🏻 This week's food prep: β€’ Bell peppers sliced β€’ Cabbage & cucumber salad β€’ Steamed lentils β€’ Roasted red potatoes β€’ Marinated tofu β€’ Homemade parsley pesto β€’ Homemade Thousand Island dressing β€’ Falafel for the freezer β€’ Raw date brownie bites β€”because balance πŸ˜† A couple of hours in the kitchen today means I can throw together quick and easy nourishing meals all week without overthinking it 🫣 Food prep doesn't have to mean spending all day cooking or filling your fridge with dozens of containers. A handful of simple staples can make healthy eating so much easier when life gets busy. What's on your food prep list this week? 🌱

Yep. A potato. 😎 I tossed a simple potato-based chocolate mixture ( potato, water, dates, cacao) into my Ninja Creami and ended up with one of the creamiest chocolate gelato style ice creams I've made yet! No coconut milk. No heavy cream. No weird ingredients. No massive amounts of sugar. Just real food doing what real food does. And can we talk about this chocolate syrup? Because it's almost just too flippin' easy! ✨ Homemade Chocolate Syrup β€’ Cacao powder β€’ Maple syrup β€’ Water Whisk until smooth and glossy. That's it. Drizzle it over ice cream, fruit, pancakes, oatmeal, or stir it into plant milk for the quickest homemade chocolate malk ever. Sometimes healthy eating isn't about finding complicated recipes. Sometimes it's just taking simple ingredients and turning them into something that feels downright decadent. Potatoes continue to prove they're the most overachieving vegetable in my kitchen. πŸ₯”πŸ«πŸ˜‚

I've been dreaming about Skewers here in Spokane, and their vegan shawarma plate they offered back in February during "restaurant week". It was delicious. So delicious that I'm shocked it isn't on their regular menu. Tonight was the night that I had to try making my own. πŸ˜„ You guys... I honestly think this bowl is even better. 🀯 ✨ Crispy shawarma-spiced roasted chickpeas ✨ Lemony yellow "scrappy" mung beans ✨ Fluffy basmati rice ✨ Cucumber & juicy tomatoes ✨ Homemade quick-pickled red onions ✨ Creamy lemon tahini sauce made with my homemade aquafaba mayo Every bite had crunch, creaminess, tang, freshness, and just enough smoky spice. Andrew gave it two thumbs up, so I'll absolutely be making it again. This recipe just earned a permanent spot in the Rooted & Wild Kitchen recipe collection. 🌿 Would you order this at a restaurant...or better yet, make it at home? πŸ‘‡πŸ’›

Do YOU cook when it's hot af or do YOU eat something cold and easy?? Tonight's dinner was ready in less than 5 minutes. It consisted of whatever I could find in the fridge and somehow it turned into this beauty. Pre-cooked diced potatoes + homemade aquafaba mayo + cucumbers + scallions + sweet pickles + mustard + tomatoes + rice vinegar + sunflower seeds + chickpeas + chilled lentils. Cool, creamy, crunchy, SUPER filling and exactly the kind of "throw it together" meal I love. Gave me potato salad vibes BUT so much better than basic tator salad! Sometimes the best recipes aren't recipes at all. πŸŒΏπŸ’š

Loads of salads and slaws but I also put a load of veggies and beans and lentils in the slow cooker yesterday just let it so it’s thing
