Protein Intake
I have been MIA lately due to planning my daughter’s wedding but now I’m back. I’m an empty-nester now and find cooking for myself is SO MUCH EASIER!! I’ve been successful at keeping my calories low but the other macros were out of control and way over nearly every single day. Today is my restart. I started out with 1 C of a street corn chicken bowl (leftover dinner) and 2 hard boiled egg whites yielding me 34G of protein!!! I’ve also replaced my creamer with a bit of coffee with an orange spice hot tea with honey. It’s so delicious and I’m saving myself the calories AND sugar/fat. Counting down the months til May. Hawaiian cruise is on my Horizon.

Hi! I’m Amy. I’m 55 years old, single for 16 years, and medically retired. Spent 28 years as a Paramedic and made a career change inspecting bombs and missiles for the military. In 2022 I got an auto-immune disorder called Guillain-Barré that left me paralyzed from the head down. I spent 7 1/2 months completely dependent on other people. I couldn’t move, I couldn’t get a drink of water by myself, I wore diapers, I relied on other people to feed me. I lost 54 pounds, mostly due to muscle atrophy. I’ve gained all 54 pounds back plus some. I’m tired of feeling fatigued and I’m tired of being fat and unhealthy. So here I am. Reworking my brain and reworking dead muscles to gain strength and healthier habits.
Early win!
I am seeing growth and progress within myself this morning. Took my granddaughter to a donut shop as a treat. Me? As much as I wanted a donut I chose to get a Jalapeño Kolachie (similar to a pig ‘n blanket). I also chose to wash it down with water instead of Soda. I’m doing this thing! Go make it a great day! You can do this.

Tortillas and carbs
Is there much difference nutritionally speaking between regular tortillas and low carb tortillas? What about taste?
Success
I’ve been up for an hour and have a few goals completed. I’ve drank my water (20oz) and I’ve completed my morning journaling. I’ve meditated which is something I’m not used to doing. It was so nice to just sit in the quiet and hear myself breathe. I’m a writer so getting back into journaling felt good!
