If we coach people as a probono client, should we get them to sign a contract like we had to do in the Nurse Coach Collective?

For the coaches getting clients, do you have stripe? I know in order to have stripe you jave to jave a business account and EIN number? I have all those, I'm just curious what everyone else is using, because I may dissolve my LLC and everything by December at the latest. I'm also paying for Google workspace, which is on 16.80 a month, but still. Practice better is the free version now.
