Rack of ribs for tonight (and several upcoming lunches)

First time in this shell and I was scared to flip and lose my phone, so this is what we have for a picture. This was the maiden voyage out on Suttle Lake!

The fam had hamburgers. I made quinoa, black beans, avocado, cheese stick bowl.

@Adam Koller I tried making whipped coconut cream and it never fluffed up. I did refrigerate can overnight, but maybe I put too much liquid in mix? Any suggestions? Ended up turning coconut cream into a smoothie and made protein pancakes and eggs with Greek yogurt and fruit.
