I've been eyeballing my hydroponic kits again, I really do love to see something start from seed that I hope will make so that I can convert to soil this winter and be ready to plant out in the landscape or vegetable garden next spring. In the mean time, it is time to take a short survey of the canned goods we do have so that planning next year's garden can commence. Did you know that most canned goods even if the seal is solid, will still lose a lot of their nutritional value if not used in about 24 months after you can them?

Funny thing about gardening - especially vegetable gardening, you always think you need to try something out just to see what happens. This year, decided to test out dehydrating yellow squash. Now I don't have a dehydrator, I use the gas oven so when you read about dehydrating in the oven, that is because I don't have enough counter space for any more kitchen gadgets! Anyway, dehydrated this squash back in June, and I elected to not blanch it first, I will next time. Put it into a pot of hamburger soup (everything from the fridge, plus some burger!) and I tossed in a bag of this dehydrated squash. Was PRETTY darn good! I do have to admit the skin was a little tough, I probably should have broke it into smaller pieces and I think the blanching would have helped too. But all in all - had nothing to lose and gained a little knowledge - not a bad day at all!
