I had meant to share this when I actually made it...this is the situation when I make pico de gallo, which is one of my favorite fast foods.
It's not necessarily fast to make cuz everything has to be chopped up into little bits. But once I have a big bowl of pico, I'm good for days. Sometimes an entire week depending on how big of a batch I make.
I throw it on scrambled eggs.
I get a can of beans and some rice and top it with lots of pico.
Goes well on salmon (although mango salsa, works even better).
Works as a dip for chips.
It just makes everything taste better!
