But who's to say that those 2-4 clients aren't just 2-4 bosses that you're working under (instead of you being your own boss)?
This time it's no longer just writing a few pieces of copy for a couple hours a day, you're probably working under multiple teams with different schedules and workloads.

You're correct.
But, that's not the full picture.
The thing with copywriting is that it's a launchpad.
You're essentially getting paid by millionaire biz owners who teach you how business works as you write copy for them...
That's where the phrase "Learn while you earn" comes from.
Cause as a copywriter, you'll probably also do other marketing tasks and work with other departments.
So the whole time, you're shortcutting the process and building massive amounts of experience and a great skillset.
And if you hit 10k, 20, 30k/mo and no longer want to be a copywriter, that's fine.
Then you take those skills into a different biz model that uses copywriting. And by the time you get to this income level, it will be more clear where to go.
