How long (duration) did your inspection last and do you get your rating immediatelyplease?

Do I need paper versions of my paper work ? My fridge temps, cleaning schedule, allergy matrix and ingredients matrix all on my iPad do I need to print them to show examples or can I just show my iPad ?
