🍫 The Weet-Bix Slice Remake (Higher Protein, Still Tastes Like Childhood)
Remember getting this in your lunchbox? Same. But let's make it work for our goals now.
I've taken the classic Weet-Bix slice and given it a protein boost + swapped flour for oats. Because we're grown-ups now and we can do that.
🍽️ THE STRONG & SATISFIED WEET-BIX SLICE
Ingredients:
Base:
· 12 Weet-Bix, crushed
· ¼ cup cocoa powder
· ½ cup brown sugar
· ½ cup oat flour (blended oats)
· 1 scoop chocolate or vanilla protein powder
· ¼ cup water
· 200g melted butter or coconut oil
· ½ cup desiccated coconut
· 1 egg
Topping:
· 200g dark chocolate melts
· 1 tbsp coconut oil
Instructions:
1. Preheat oven to 160°C fan-forced. Line a slice tray.
2. Crush Weet-Bix in a large bowl (get those frustrations out).
3. Add cocoa, sugar, oat flour, protein powder, and coconut. Mix dry ingredients.
4. Pour in melted butter, water, and egg. Mix until combined.
5. Press mixture firmly into the tray.
6. Bake for 15-20 minutes. Let cool completely.
7. Melt chocolate and coconut oil together. Spread over cooled slice.
8. Set in fridge before slicing into squares.
