🍪 The Cookies I Make When I Want Something Sweet (But Not TOO Sweet)
Snack time is dangerous for me. If I don't have something good ready, I'll eat anything.
These Chunky Choc-Chip Weet-Bix Cookies live in my kitchen 24/7. They're:
✅ Lower sugar than regular cookies
✅ Protein-packed (thanks to that sneaky scoop)
✅ Crunchy from the Weet-Bix
✅ Chocolatey enough to satisfy the craving
🍽️ THE RECIPE
Ingredients:
· 125g butter (softened)
· ½ cup + 1 tablespoon sugar (~120g)
· 1 large egg
· 1 cup flour
· 1 scoop vanilla protein powder
· Pinch of salt
· 2 Weet-Bix (gently crushed)
· 100g dark chocolate (chopped)
· ½ cup coconut flakes
Instructions:
1. Preheat oven to 180°C (350°F). Line a tray with baking paper.
2. Cream butter and sugar until light and fluffy.
3. Beat in the egg.
4. Mix flour, protein powder, and salt in a separate bowl.
5. Combine wet and dry ingredients.
6. Fold in crushed Weet-Bix, chopped chocolate, and coconut flakes.
7. Scoop onto tray and bake 10-12 minutes until golden.
8. Cool (if you can wait that long!)
