Hey guys. I eat this almost every day and it still feels like a treat.
If you crave dessert for breakfast (same), this carrot cake baked oats recipe is about to change your mornings.
🍽️ THE RECIPE
Ingredients:
· 2 medium ripe bananas, mashed
· 2 cups rolled oats
· 30g vanilla plant protein powder (or ¼ cup wholemeal plain flour)
· ½ tsp cinnamon
· 1 flat tsp baking powder
· 1 medium carrot, grated
· ¼ cup pecans/walnuts, crushed
· 1-2 tbsp honey/maple syrup
· 1.5 cups milk of choice
To serve:
· 1 pot (~160g) yoghurt mixed with 50g reduced fat cream cheese
· Extra crushed nuts on top
· Optional: add 1 scoop of protein powder & cinnamon
Method:
1. Mix all ingredients together
2. Pour into baking dish
3. Bake until golden
4. Top with that dreamy yoghurt/cream cheese mix
5. Enjoy your breakfast that tastes like dessert!
