Wanted to share with you all tonight’s dinner… it was so yummy. My almost 5 year old requested shrimp so we delivered (I know, I’m so impressed with his palette. I doubt I was craving seafood at that age, lol) my almost 2 year old is just as adventurous and enjoyed the meal as well! 🤩
I really wanted black beans 🫘 and I’m so used to having it with rice or something similar like quinoa, but I wanted to ease on carb intake this meal and decided to go with shredded cabbage as my substitute and it was delish 😋 had a crunch and absorb the black bean liquid perfectly; mission accomplished and happy tummy.
My family had this meal with quinoa.
Shrimp with sautéed garlic, onion, cilantro, and lime (shrimp air fried and then combined with chutney, lightly seasoned with old bay)
Roasted frozen broccoli
Black beans
Tri color shredded cabbage
1/2 avocado
