Parma? Parma? Chicken parm?
No matter where you’re from, this classic pub meal really hits the spot. Crumbed chicken breast fillet, topped with ham, Napoli, and cheese. What a winning combination! And for reference, where I’m from, it’s definitely a Parma! Kiddo isn’t into the cheese ham and sauce bit, so his is the crumbed chicken, chips and sauce!

Fried… in all the ways
The heat here in summer (in Melbourne) this week has been savage. Two 40+°C days has absolutely zapped me of what little energy I had to spare. Finally at the end of my 46hr week, I’m done in the kitchen for two whole days. I still have a family to feed, but have zero desire to be in the kitchen yet again. So tonight, it’s toasties! Cheese and pineapple for the child, ham cheese and pineapple for the other half, and hot salami, ham and cheese for me! Not nutritionally dense in ANY way, but easy, filling, and delicious! What’s on your menu today?
