๐ฟ Simple Vegan Lentil Curry ๐ฟ
Ingredients:
1 cup red lentils (soaked 30 mins, rinsed well)
1 tin coconut cream (400ml)
1 tin chopped tomatoes (400g)
4 cloves garlic, minced
1 onion, chopped
2-3 tsp curry powder
tsp smoked paprika
1 tsp turmeric
1 tsp cumin
Salt to taste
Fresh herbs of your choice
Squeeze of lemon to finish
Method:
Soak and rinse lentils thoroughly
Sautรฉ onions in olive oil until golden
Add minced garlic and all spices and stir for 1 minute
Add lentils, tinned tomatoes and enough water to cover
Simmer for 15-20 mins until lentils are soft
Stir in coconut cream
Simmer gently for 10 more minutes
Squeeze lemon juice in, season with salt
Top with fresh herbs and serve! ๐ฆ
Delicious served with quinoa for a protein packed meal, or cauliflower rice for a low insulin option!๐
